Chocolate tart

A good chocolate will take this dessert to HEAVEN. I know that nowadays in Lebanon finding a good chocolate is somehow tricky, I used what I had from Callebaut, black and milk chocolate. But you can use any chocolate, I can assure you it will be delicious.

Chocolate tart

if you feel like indulging yourself in a rich, smooth, crusty chocolate tart, this one is for you.

Equipment

  • Blender
  • nonstick tart pan
  • Rubber spatula

Ingredients

  • 260 g flour
  • 100 g powdered sugar
  • 200 g butter
  • 1 pinch salt
  • 60 g cocoa Good quality

Chocolate ganache

  • 250 grams milk chocolate
  • 200 grams dark chocolate 70%
  • 200 ml Liquid cream
  • 50 grams butter

Instructions

  • Prepare the dough:
    In a mixing bowl, place butter and powdered sugar, mix together until all well incorporated. Add flour, cacao and salt, mix until you get a beautiful soft dough. Chill for 20 minutes
  • Roll the dough in a greased tart mold, place a paper parchement and empty a handful of heavy grains. Bake for 15 minutes in a preheated oven 200C. Remove after 15 minutes, set aside the parchement paper with the grains and bakethe empty pie for 5 more minutes. Remove and let it cool down.
  • Prepare the ganache.
    Cut harshly the 2 chocolates and place in a bowl. Heat the milk in a small saucepan as well as the liquid cream. Pour the hot milk over the chocolate while stirring and finish with the hot liquid cream. When all incorporated, add the butter stir until you get a smooth chocolate cream.
  • Fill the empty tart with the ganache. Chill for 10 hours and serve. You can sprinkle kosher salt to counterbalance the sweetness of the chocolate plus it will exalt the chcocolate's flavor.
