Hi! Its been a while that I was looking for the best waffle recipe, I researched, compared online recipes and even tried some. But this morning, I suddenly realized that I can make a Lebanese omelette ‘Ejeh’ using a waffle machine . I didn’t know what to expect and the result came amazing to me. Non grease Ejeh with its full flavor topped with a juicy salad. How healthy can it get? Here is what i did.
Handful of parsley
6 mint leaves
4 tablespoons flour
1 teaspoon baking powder
A pinch of baking soda
Salt, pepper and cinnamon.
1 tablespoon sunflower oil
I decided to puree the green ingredients in a mixer ( zucchini, parsley, mint, onion and some salt)
In a bowl beat the eggs until fluffy and add the flour, baking powder, soda, peppers and salt. Squeeze out the water from the green mixture and add them to the batter with the oil .
Heat the waffle iron cast machine over high heat and pour the batter in the waffle compartment, grill for 2 mns then flip it over. Be sure you are not burning those Lebanese waffles!
Prepare a salad with cherry tomatoes, white onions, mint , dried oregano, feta cheese diced into cubes, lemon and olive oil. Top each waffle with that juicy salad. Nothing beats the real Ejjeh i do like it oily and fluffy but those waffle ejjeh are not bad!
